First time jerky making - too hard / not tender - advice?

Hey all. I just made jerky for the first time. I did Doc's Best Beef Jerky ( https://www.allrecipes.com/recipe/142948/docs-best-beef-jerky/ ) and followed it exactly, even letting the meat marinade for a few days. It calls for 4-6 hours of dehydrating, so I did 5 hrs, but unfortunately, it came out a little harder than I liked. Still edible, but meh.... I checked it 2 hrs in and it actually looked done then (which I'm sure is normal), so I let it go a full 5 hrs before stopping it.

Should I have stopped it at 4 hrs for perfect/best results?
