Hey all, I'm going to make jerky for the first time & I'll be trying Doc's Best Beef Jerky recipe ( https://www.allrecipes.com/recipe/142948/docs-best-beef-jerky/ ). I was watching a youtube video on another recipe and someone advised putting your jerky in the oven at 350 degrees (I think) for 10 mins once it's done dehyrating, to kill bacteria. Is this last step necessary? I know curing salt is an option but I'd like to minimize expenses if possible, so this oven step seems the most convenient for killing bacteria, or would most all of the bacteria die during dehydrating? Thanks!
