Discovering Jerky

Ok, so when I were but a young lad, once did I try beef jerky, and, lo, I hated it. It tasted like blood to me, and I didn't eat jerky again for many moons...
Ok, this is getting stupid.
So basically, I tried jerky again far more recently, and liked it, been figuring that I have missed out on something great for twenty years now. So now, I am wondering what jerky out there is worth trying? There are so many jerkies to try! Squirrel, fish, alligator, elk, bear, snake, turkey, yak, boar, duck, ostrich, kangaroo, turtle, human!?
Please, tell me what you can about what jerky is worth eating!
