What are some good authentic Italian dishes that I can make over my winter break for my parents?

I know as an American (with distant family members coming from Sicily, Poland and Beirut) than most “Italian, Polish and Lebanese/Syrian cuisines” are altered and not completely authentic, especially Italian food. This can be said for Japanese and Korean cuisine here as well because of the lack of resources that are found in other places or different tastes and preferences.

What are some really good dishes that aren’t too hard to make for a somewhat intermediate cook? I know this is vague to ask but to make it less what are dishes that are somewhat spicy and or some good traditional soups or meat dishes since it’s winter.
