IPOD Classic not recognized in Itunes

So recently i got tasked with recovering the data off of an old 7th gen Ipod classic for an elderly family friend. It's one of the late 2009 120 gb ones. I'll admit, I've got very little experience with apple products beyond an old shuffle I had when I was a kid.

I'm using a new synch cable and after attaching it to my computer, Itunes doesn't even recognize it. My computer locks up for a good 15 minutes then it shows as a usb device in file explorer. I went into disk management and after another 15 minute wait it's shown as an unallocated drive partition. Tried EaseUS and Recoverit's software packages to pull the data, neither of them see it. On the ipod i can only do a soft reset via menu select and after a minute or so i get a " restore in Itunes message" if it's not connected via usb. If it is plugged in, it does cause file explorer to slow way down or crash. When I unplug it, my system goes back to full speed. Honestly I'm out of ideas and could really use some help. At this point I'm tempted to tell them that the data's gone or to hire a professional data recovery service.

just tried that again unplugged and realized it will only go into disc mode when it's plugged in. I also can't go into diagnostic mode either. I'm just stuck at the apple screen you get after a reset
