Improper transfer from 11P/12PM to 16/16P

Yesterday, I got my wife and I two new 18s. We have the 11/12s and used ATT.

We have some APPS, but mainly use the thing for photos, email, calling, texting.

I wanted to move away from ATT to a new plan at Total Wireless. This involved porting the numbers.

Because the Total Wireless plan we were getting was on 'sale' until end of this month, I was worried the port out of ATT, or into Total might jeopardize my opportunity to pounce on the sale.

The Apple people told me to take the phones straight to Total and have them port the numbers yesterday afternoon, and that I could do the set-up/transfer/migration from old to news phone last night.

I got home, after the successful postings, and started the new iPhones. Each asked me to point a circle in the old at a round graphic in the new. I assumed this was proper.

I did everything I was asked, and then... nothing really happened. NO status bar, or verification. I have been looking at both my wife's, and mine, all night and just this morning, and our email accounts, old texts, aren't there.

It goes without saying our 'lives' are on these devices, so I'm a bit horrified. Can anyone give me any tips as to how I can restart this migration, or figure out if it's still doing it, and where it's at?

I was told to pair the phones by the Apple sales guy. He said restoring from the iCloud would not bring everything over. I'm fearing this is exactly what is going on. Is there a way to unravel this? Thanks.
