How does AppleCare work when buying a new device, and transferring ownership of the previous device?

I will be buying the iPad Pro 7th gen, and my current iPad will go to a friend. This iPad is the first iPad for which I have had AppleCare in over ten years of iPads.

How does this all work? When I buy the new iPad, do I then have AppleCare coverage in both, since my coverage is current? Do I only have coverage on my current iPad? Do you have to have individual AppleCare coverage on every device you own? Will the person that gets this iPad be able to keep coverage if he decides to pay for it? I am sure there are many of you who have been through this, I would greatly appreciate any info.
