Weekend plans

I get anxious when people at work ask me about weekend plans on Fridays or “what did you do this weekend?” On Mondays
I feel like I’m required to plan out my weekends just so I have something to say to them on Monday.
So what’s the best response without offending people at work?
I would like to say pole dancing but my job is a high ranking position so I don’t know if that’s appropriate hehe
