Where to enroll as a non-degree seeking student solely to for an internship?

Long story short... I have a potential internship coming up that would be a can't miss opportunity. I JUST found out in the interview process that they REQUIRE school credit to participate. The cutoff date at my university to receive internship credit was about two weeks ago and after much begging they wouldn't help me.

Is there any university or community college I can enroll in, pay whatever is necessary, and get credit for the internship over the summer? Anyone have suggestions or ideas to qualify for this internship?

Side note: The college credit is essentially worthless to me, so any sort of transfer issues wouldn't be a problem. It's the work experience from this internship that's what is actually important.
