Plex server on NUC?

Hi guys! What is the overall “best” NUC for a PMS (plex media server) Im not going to game or anything. Just pure PMS. Ive got around 15/20 users. Most streams at the same time are around 5/6 users. Right now I’ve got a DS918 but I’m looking to upgrade.. Budget /- $1100 NUC needs to be on for 24/7. Some clients do need transcode. I don’t have 4K only 1080 x264. Files are around 3-6gb Like to hear from you!
