Confused, so much information, help me decide which CPU is best for me

Allright guys. Im out of options, i need advice.
Currently im running an 8 years old I7 2600 on the P8H67 board with a HD 6970 GPU.
What i notice is that my CPU is going to the 90/95 degrees when i use software like Handbrake, or other encode software
- be in mind, i do NOT game on my pc - i only use my PC as a video editor / encode media content.
But anyways, like i said, the 2600 has give me 8 years of fun. But i think (when i look at the HWMonitor) that its time for a new system.
I was looking at the 8700(k) or the i9 9900k. With the ASUS Prime B360 and the Cryorig H7 CPU cooler Price is not really an issue, ive got some savings, however, i dont want to pay hunderd of dollars extra for 1-5% more performance.

Which CPU do i need for encoding / decoding etc (video content)

Not playing videogames at all.
