I super want to love the instant pot. We’ve had ours for a long time (just read the post about replacing the gasket and put some in my cart), but I keep undercooking stuff, even when I adjust for altitude (6k feet). Beans are crunchy, carrots are crunchy, everything is crunchy.
So today I’m making a pork stew thingy based on this tiktok. (Obviously, Im not a passionate chef in general, but my SO strongly hinted he’d like to try this and I have most of the stuff minus a slow cooker).
Basically, plan to sear the pork butt (~3 lbs). Make gravy as described minus peppers, add stock to make up the liquid (a lot of butter, onions, carrots, tomato sauce, a cup of water).
He says put it all in slow cooker 8 hrs on high, so I did 6 x 8 = 48 min plus 1/5 for altitude is aprrox 58 min, so 1 hr.
Experienced instant pot users, is this right? I’m tempted to just do 2 hrs but I don’t want to turn the veg into baby food.
