What makes the fries taste the way they do?

Might be a silly question, but there is something unique tasting about In N Out fries and I love them. I don't get the hate, I think they are S level.
Is it the Sunflower Oil? Do other places use Sundlower Oil?
Is it the type if Potatos?
Is it the fryer is always clean?
Trying to pinpoint what it is that I love about their fries.
