Being able to stay in the US during adjustment of status period

As a disclaimer, I absolutely do tend to consult an immigration lawyer once I'm back in the states, but for the time being, I'd like to know from others' experience what we're allowed legally to do.

I'm a petitioner requesting that my fiance receive a K-1 visa. Our plan is to come to the US once we get the K-1 visa, get married, and then file for an adjustment of status in order to receive a green card. My question is, would my fiance be able to stay in the US beyond the 90 day K-1 period if we filed for an adjustment of status? Or would she legally have to leave the country until her green card application came through?
