Phone is 15 Pro. Sorry for the typo!

Sadly, my phone was stolen last night while at the casino in Las Vegas. When I noticed it about 10 minutes, had passed. I went into find my iPhone. And I started the procedure to track it into shut everything down. I put in the code to erase it. It started at 12:08 PM.
I could see every movement the thief made. Evidently it was probably a theft Ring working several different hotels because they were stopping until about 5 AM in the morning. I did get this note from apple saying that the phone had been erased. How do I know that nothing was compromised from the standpoint of my information on the phone. It was password-protected. I can see where it immediately removed my Apple Pay credit cards. I assume that it erased the rest of the phone. Does anybody know?

So hopefully they could not read or scan the phone in any manner. Any thoughts?
