This metal door latch broke! How do I replace this (what material) so it won’t break again?

They may not have galvanized available but the issue is that that latch shouldnt be the mechanism that actually stops the door. There should be a stop (usually just a thin piece of wood) against the post on the inside of the door that the door hits up against when it's closed. The latch should only prevent it from opening. If you replace this with basically anything else, the same thing is going to happen.
