The Thing, 1982: why didn't the dog just infect everyone straightaway?

Re-watched the movie yesterday and, as always, left amazed by how brilliant it is. A lot of the movie has been debated, such as the timeline of infection and the ambiguous ending, but yesterday I was left with another question: if a single cell of the Thing is already enough to assimilate someone, why didn't the Dog Thing just go around and infected everyone (licking things and people) as soon as it arrived in the camp? It would seem to be the smarter thing to do, as nobody knew what it was by that point.
