Revisiting Scream, asking questions

I love Scream, but 20 years and multiple formats later, I have questions. Over the years, I saw it in theaters and I've bought the film on VHS, DVD, and Blu-ray. Between those versions, I remember some slight discrepancies and I'm wondering if I'm alone. I feel like the VHS was edited down from what came later, the DVD and Blu-ray.

During the opening scene, I remember watching the movie and seeing a gruesome scene of Steve's guts falling out, but I also remember one where it cuts but doesn't actually show he was gutted. The current Blu-ray releases show the entire, gory scene, but I have strong memories of it being edited down. And I can point to another, rather innocuous scene: once school is cancelled and they plan the climax party, Stu says "cool, you guys bring food, alright?" (or something very similar). In the edited version, I remember there being a quick cut when he finishes that line, but in the theatrical and at least Blu-ray versions, he does this extra little arm pump like he's revving himself up for the night. There's probably other details to point to, but these stick out in my mind. Does anyone else have a recollection of these? Is there any information on why exactly these edits were made? The film has never not been an R-rated movie, so some of these changes seem really odd.
