What makes violence fun and what makes violence disturbing?

I’ve been on a kick of watching New French Extremity films and it’s made me start asking myself this question. I’ve seen plenty of slit throats, stabbings, decapitations, and torture scenes in plenty of horror movies, but rarely is it as disturbing as it is in this particular genre. Normally I enjoy giggling at gruesome moments and deaths but these films have a way of sucking the fun out of stabbings and shootings. Why? What separates fun gore from disturbing gore?
