Setting up a new receiver. What do I set Amp assign to for 2.0 (L/R). Also volume levels seem weird

Setting up a new receiver for my parents. Denon X1400H.

Do I set amp Assign to Zone 2 or some thing else for a Stereo 2.0 setup? I ran Audyssey and had it do it's thing. I just didn't know what I should change anything else to.

Also, on sub settings since there is no sub right now, do I leave it at 250LPE?

Lastly, My parents have to turn the volume up to about 70 for it to be normal volumes of listening. Is that normal or is their something wrong? Any way to fix that?

Yes I am getting them to buy a Sub 1200 and a Center speaker. No I don't need recommendations on those 2 things but ty!
