Looking for input on acerage size

My partner and I are eventually looking to buy a house, hopefully in the next 3yrs or so. We're currently in Atlanta but looking to either move outside of the perimeter or somewhere in Virginia possibly near Richmond. I have goals of eventually having berry bushes and fruit bearing trees and some chickens, as well as a garden. Not so much homesteading, but providing for our family and jarring/canning/preserving things. I argue that we would need 2 acres but she thinks one would be fine. Obviously it's not a pressing matter now, but we're looking to travel to Virginia this summer and wanted to sort of eyeball areas and prices, so I wanted to narrow down how much land we would realistically need. Thanks for any input.
