Covid: District is stopping virtual learning

In Texas w/ a 5th (elementary) & 6th grader (middle school). My district just announced they’re stopping virtual learning & require all kids to go back unless they have a medical condition. Mine don’t but it’s simply not a risk we’re willing to take.
Where can I start my research? What works & what doesn’t? Is it possible with all adults in household working full time, even if it is from home?
