People who use a VM as their everyday machine/OS, how do you set it up?

I've always been confused on how people set up a VM as their everyday machine on their server and claim to have native performance. My home has wired Gigabit (and I imagine most homes do, correct me if I'm wrong), and I can't imagine a gigabit connection to a remote VM on my server would produce anywhere close to native performance. Do you just have VMs set up on your PC? A networked server VM with AD for networked accounts? Some mysterious technology I've never heard of? Please enlighten my small brain :)
