Is it better for me to have a HomeLab with a rackmount or is it better to shove all the things I want to do in one beefy desktop?

Hello!
Here are all the things I want to do:
- Have a NAS to store all my data.
- I really don't need a lot of storage, I just want a central location to store all my data and access it anytime.
- Run dedicated servers for video games like:
- Valhiem, Minecraft, Satisfactory, etc.
- Host my own VPN.
- Create my own network (I don't know anything about networking)
- E.g: building my own router, modem, etc.
- Do some media server stuff
- E.g: Have a movie and tv show library in Plex or Jellyfin.
- I want to play around with virtualization and docker.
- I plan on learning CSS, JavaScript, and HTML so I might want a place to host my own websites
- I am also going to learn data structures in c and I want to play around with data bases.
So as a beginner who only has built gaming pcs is it better for me to build one specked out computer that has lots of hard drive storage, nice CPU, adequate gpu, etc.
Or would it be better to buy a server rack. I am thinking a 15u server rack and buy multiple rack mounted pcs to have things like my NAS, dedicated servers, etc?
