Herb infused water

Obligatory “I’m new here” and if this is one of these questions that is posted daily, apologies.

I am a novice herb grower and just started a couple of months back after building a raised herb planter in my backyard. I have about 10 or so including mint, lavender, bee balm, lemon balm, etc. My wife really likes water infused with fruit and asked me to make herb infused water (lemon balm and lavender as an example). I’m also adding some of these to my cold tea that I brew.

My question is that the herb infused water tastes very earthy and isn’t crisp. Any resources you can recommend so I can get better at this?
