Best Hackintosh build for gaming/video editing?

Hello, Been wanting to add to our Mac family with a new machine. My son and even myself have been getting into video recording/editing for youtube. Mainly it's just Minecaft but I'd like to future proof things a bit. Was originally going to just build a gaming PC but though doing a hackintosh would be fun, plus we enjoy and are comfortable with the Apple echosystem and apps.
Would love to stick around 500 -1000 bucks (less would be best but I can understand that budgets can expand on builds).
