Cayo Perico Heist was silently updated in the following ways:

You can no longer use C4 to disable Rubio's helicopter in the Cayo Perico heist

Guards are 2x more likely to find bodies than before

Helicopters and enemies now aim directly for the head and the difficulty has increased exponentially

Randomly spawned enemies come out of the woods and target you (this was an issue before, but instead of one or two it's 5-6)

Dirtbikes that have crashed have a 50% chance to be immobilized

Less likely to get art in Rubio's office

I also noticed there are more ways to go under the map, as a few of the lobbies had players glitched under the map farming kills

I know I'm missing some but those are the ones I've noticed lately
