How long to recover from ingesting gluten?

Hi guys. I've been having some digestive issues and one of the possibilities on the table is celiac. In an effort to get a handle on things, I've stuck to a very restrictive diet for a few weeks now and found some improvement. Basically, I'm eating very low fat, very low sugar and gluten free.

Well, my DNA tests came back and I have neither marker for Celiac. Discussing with my GI specialist she presumed that the issue wasn't Celiac and figured it's probably some form of IBS.

Two days later I decided to try things out an ate your standard blueberry muffin. Two hours later I'm in the bathroom having floating stools as if my progress was gone. The next day things were almost back to normal-ish. But since then things have been touch and go in the poop department.

My question is this. If I was improving from going gluten free, am I now back at square one? How quickly does one recover from one instance? Or is it more likely something else is going on.
