Reintroducing gluten

I have been both gluten and dairy free for about 5 or 6 years, after being violently sick after eating a bowl of pasta and cheese, and a sleepless night of diarrhoea after eating and extremely creamy dessert.

I don't know if the first one was a reaction to the cheese or the pasta, but I removed both.

I ate pasta for a biopsy which showed some irritation but not celiac, I am thinking now that it was dairy that might have cause the irritation rather than the gluten.

Yesterday and today I have had one meal (a sandwich) with normal bread. I haven't had any reaction really although I have felt a little anxious which has made my tummy feel a bit tight.

Just wondered if anyone else has tried to do this and how it went.
