*****This does not apply to anyone with celiac.*** I am gluten intolerant/sensitive (still working through which it is) but sour dough does not give me trouble, so I do eat it from time to time. I understand that my experience does not apply to everyone and am not attempting to convince you otherwise. (Can you tell I've taken some heat for this?)

We went to Seattle last week and discovered that sourdough is huge there. We went to an amazing restaurant called Von's 1000 Spirits . They specialize in sourdough, including pasta and pizzas- to be clear, it was not gluten free but due to the fermentation process, some gluten sensitive people can tolerate it. This was the best meal we had, by far, on our trip and that's saying a LOT. I bought pasta to bring home ($17 for a .5 lb bag) because it was amazing. I will now be trying to make my own because that price is not sustainable for me. I'm also going to try doing my own gf version of sour dough bread- if anyone has recipes, please share!
