Newbie question about burping in plastic bottles. Please help, my dogs are terrified and my kitchen is sticky

So I just began my secondary fermentation today, went to burp my bottles less than six hours after bottling and I had two go off as bombs. When you burp a bottle, are you supposed to release only a little of the gas or all of it? Should I keep my whole hand over it to physically stop the pressure? If I leave the bottles over night to ferment with the lids only partially on, will I loose all the fizziness? Help, Iām scared and I lost half my beer!
