What's an antiinflammatory, healthy meal you have created?

I made a cold bosmati rice tuna salad for lunch today for the first time.
- 1 envelope of tuna.
- 1/3rd cup of cold, cooked bosmati rice. (antiinflammatory carb with 50 glycemic index).
- 1/8th of an avacado (antiinflammatory fat).
- 1/2 tsp stoned ground mustard.
- 1 tbsp dill relish.
- 1 tbsp avacado mayo.
I might blend bosmati rice into a granular texture, mix in a raw egg and bake into taco shells/flat bread much like you can do with cloud bread (cottage cheese & egg) later to make a bosmati rice tuna salad tacos at some point.
