What are some healthy meals you've created that have become a staple to your nutrition?

I am 11 weeks post-op and cleared from dietary restrictions by my surgeon for a while now but because of my eating disorder I still don't eat red meat or any inflammatory foods at all. Infact my nutritionist said I tend to eat a little too healthy.

I typically have the exact same meals every single day with next to no variation.

Breakfast:
2 hard boiled eggs (protein).

1 small no sugar applesauce packet. (Antiinflammatory carb).

1 spoonful of no sugar nut butter. (Antiinflammatory fat and minor protein).

 ----------------------------------------      

Lunch:
1 small baked white fish fillet. (Protein).
Baked with a drop of avacado oil. (Antiinflammatory fat that doesn't turn into trans fat when cooked over 200° like most oils do).

1 small sweet potato. (Antiinflammatory carb).

1/4th of an avacado. (Antiinflammatory fat).

Dinner is totally identical to lunch except chicken instead of fish and sometimes a couple green beans as well.

I don't mind the routine and the same foods every day because I've lost my joy in taste post op but I do value options and would really love to hear what healthy meals you enjoy.
