Overwintered Potatoes in 6B

This is the first time I've overwintered potatoes - and last year was the first time I grew potatoes - so I'm a potato newbie! When will I know that overwintering worked? They're in raised beds/bags and covered with straw all winter. When is the best time to remove the straw and does hilling the dirt work the same as it would if they weren't overwintered?
