Winter sowing

I'm relatively new to gardening (zone 6a). I started with an 8x4 raised bed doing the square foot method last year and things turned out better than expected. I did some from seeds and some from transplants but this year, I'm trying some winter sowing. I'm expanding the beds and variety of plants this year, so if anyone has suggestions for fun plants, I'm all ears. Mostly did veggies last year.

I'm going to do several milk jugs outside because I like the idea of not having to harden off, but figured I'd also try some seedlings inside with grow lights and just see how it goes. Are there pitfalls I should be aware of? Any words of wisdom from people who know more than I do?
