1st or 3rd person, Single player, open world with survival/base building

I'm looking for some suggestions of an open world game with base building in it

Ideally combat is easy/simple, more looking to chill than to struggle Dark Souls difficulty combat

Single Player or PVE go it alone MMO

If EA, then mostly done & playable

Played and finished

Satisfactory - Amazing game, but played it to much

Subnautica - Great game, played it out

Subnautica Below Zero - Shallow expansion

Fallout 4 - Fun, but played it to death

Fallout 76 - Its glitchy & seems to be going microtransactions to win type of way

Astroneer - I can't get into it, tried a few times and it just doesn't click

7 Days to Die - I tried and hated, clunky & to many enemies

Ark - Sounds fun, but I don't want to team up or have everything destroyed when I don't play for a while, don't know what SP is like

Dyson Sphere Program - bit clunky, top down not what I'm wanting

Mewnbase -Fun but played it out

State Of Decay - Bit Clunky, Fun to start with until the zombies difficulty ramps up over time.

Don't Starve - Top Down & never got into it

My Time at Portia - No combat or danger at all, I want some danger

The Forest - Like it, but its a massive grind to build a base by yourself, needs a team.

No Man's Sky - every planet is effectively the same and feels empty

Maybes?

Space Engineers - Played it years ago, Looks like it has ground based play now

Planet Nomads - I have, played early EA, unsure if its good now
