Chill, Single Player Open World with base/camp/town building & no arcade/twitch combat or tough/strategic combat

Pretty much the title.

I'm on Annual Leave/Holiday, I'd like to chill out & play some, I guess easy games, in that I don't want to do difficult tactical gameplay, fast twitch based fighting.

I enjoy open world games with a touch of upgrading your base/town/mine etc.

I'd love some suggestions

Games that are kind of want I want but I've already played alot of
Final Fantasy, mostly thinking of 12 with the automated battling, so I can run around enjoying the story, environment & quests without worrying to much about enemies, but it has enemies which provide a touch of danger

Subnautica & Below Zero are both amazing games, but played them way to much

9th Dawn III is a great open world rpg with simple combat

Graveyard Keeper was fun, enjoy the resource gathering & base upgrading

Space Pirates & Zombies 1 & 2 is fun, but played to much

I tried Raft but it's a bit empty & boring in single player

Astroneer I tried & just didn't like

Rimworld a bit & Oxygen Not included are way to complicated for me atm

Satisfactory is fun, but quickly ecomes a bit complex with the factories & supply chains

Terria & Starbound also not want I'm wanting, not sure why but they just don't grab me

X Games are to complicated for me atm

Divinity & Pillars Of Eternity are amazing games, but feel a but complicated in the combat

My Time at Portia seems fun, but I can't get into it
