I'm looking for a MMO, or even a single player that has that huge open world with tons of skills you can sink 1000 hours into.I'd like one with many side skills, could be herb picking, mining, weapon types, etc etc

No subscription, I'm happy to pay up front for it, Basically I'll play it for a week/month then stop for a while then back and subscription doesn't work well with this.

Anarchy Online was amazing back in the day, The UI is way to old these days.

WoW I've tried a few times and never got into

Elder Scrolls Online I tried when it first came out, I'm reinstalling it now.

Fallout 76 was terrible when it released, but also reinstalling to try it, but I don't think this will scratch the tons of skills type itch

FF14 I've tried, looks good, but I don't like subscriptions, and due to using a couple of email addresses to demo it over the years, the login to multiple sites & installing is horrendous.

Kingdoms of Alamur while being single player did scratch this itch, but it is also short.
