Best 'Perma death' / Hardcore Survival game(s) ?

I'm really looking for some perma-decision based, but still fun to play games. I have BG3 (but that game is fkin weird man), and Valheim which both have perma death situations. But outside of those - what are some other games that have this once-and-done play style & need to choose carefully, games.
I just got Subnautica - so I'm currently trying that.
