Somewhat realistic mining

Hey yall, currently I'm just trying a lot of stuff. Right now I'm trying to create/recreate the mining mechanic from Starbase (if you don't know the game, here a time stamped link, where you can see it well: https://youtu.be/LVZPexEu_yI?t=299)
I already created procedural terrain/planets and asteroids, with different methods. But I have no clue on how to approach the topic realistic mining.
In the end I wanna put the mechanic in a vr game, so i want the player to be able to break some stone of the surface or of an asteroid, pick it up and do whatever they want with it. But i dont know how i could create the mining feature. I thought bout slicing the mesh in different ways, but it didnt worked well and didnt looked that great.
Any ideas from yall, in how I could make that work. I don't need any code or stuff like that. Just ideas how to solve/approach it.
