How to do market research to find valuable niches to develop?

For example, I like psychology and have a small background in it, but it doesn't seem as popular as, say, digital marketing, SEO, copywriting, or technology. Going on reddit, upwork, or craigslist for work, I mostly see these as the most recurring topics on the sites. Should I develop those?

I'm not sure how I'm supposed to research the demand/supply of niches. I think google trends may be relevant? I tried messing with it a bit but it doesn't make much sense to me 😅

EDIT: Also I'm more or less a complete beginner so am I headed in the right direction? Or should I just focus on writing anything for now?
