Fountain Pen Recommendations For a Noob

Hello!
I recently became a regular fountain pen user and I have been almost exclusively using Lamy Safarais and Platinum Pilots, all extras fine nibs. I do a lot of math for my major and the fountain pens make writing so much fun. I was browsing today on Jetpens and noticed that German and Japanese pens have their own sections. What are the main differences between Japanese and German pens? Which pens would you guys recommend for a newcomer?
