Advice for adjusting to a wheel and pedal setup?

I have played racing back on consoles and PC for over 20 years. I have also played all the Forza games, and before it Project Gotham Racing. I have just this week bough and setup a G920 with pedals and stick shifter. My initial attempts to adjust to this setup on Forza 5, Forza 7 and Forza Horizon 2 & 3 have been really challenging.

To give some background I have played behind car view for over 10 years, and only played on gamepad. Before getting a wheel I changed in in car view and played all 4 games mentioned above with in car view to adjust. After 2-3 weeks I feel adjusted to in car view and certainly for Forza 5 & 7 it now feels better (I am still not sure on this setup for Horizon).

But now the wheel has arrived and I am trying to adjust to this, that is not going at all well. I am spinning out all the time. I am very very slow compared to my times on gamepad. Even after 3 hours of going at it again and again I still can not get the hang of the wheel and pedal setup. I am quite a good driver in real life I have done track days etc, but I can not adjust to the wheel and pedal setup.

I am worried I have wasted a lot of money so this is a cry fo help on tips for how to get the most out of a wheel and pedal setup. I am interested in advice for Forza 7 (settings, tips, tracks, cars, etc) and for Horizon 3 (should I not use wheel for this and stay on gamepad as more arcade style game).

I am also considering getting a Dirt game in the Ultimate Game Sale, should I buy Dirt Rally or Dirt 4?
