Trouble with braking stability on certain cars.

Trying to figure out why I constantly lose stability while braking with certain cars. My starter car, the Subaru STI was totally fine. I can brake hard and the car more or less stays straight. The next event which was all the Hot Hatches, I bought the Ford Focus, which I couldn't control for the life of me. One small tap on the brakes and the car immediately turns and loses traction. Had a similar issue with the Lotus Evora. Switched to the BMW Z4, which again had more stability. I just want to be able to brake in a straight line. Help.

I'm playing on PC with a logitech g29, assists turned off.
