Higher age units?

I've seen some bits on the Internet that you can get units from a higher age, but I'm a bit confused with it.
I'm currently in EMA have finished the old ages continent map and just scouted the first province of industrial age. Can I get units as rewards for conquering the map or do higher age units only rewarded from quests?
