Flip your pineapple!!!

Gravity affects how your pineapple ripens. Sugars collect at the bottom, which is why if you let a pineapple go to long it will start to mold and ferment at the bottom.
That’s why as soon as I bring a pineapple home I flip it upside down. Sugars that have collected at the bottom make their way back to the top, resulting in a more evenly ripened piña. Even if you let it go a little extra it won’t ferment, just get extra sweet.
