Help- need to collect steam from boiling sap

You all seem like you know what you're doing, and maybe can help me with something non-alcohol related. We have a bunch of birch trees and last year we collected the sap, and boiled it down to birch syrup. You need to boil down 100 gallons of sap to get 1 gallon of syrup, a much lower yield than with maple syrup. The problem is that amount of steam from boiling in my house was crazy. What can i use to cover the pot and trap the steam (turn it back into water?) so it doesn't fill my house?
