Ending specific gravity for rum wash

I'm fermentating rum wash. 9 L molasses in total 43L wash. I'm using animal grade molasses called "Queensland molasses". Initial specific gravity was 1.090 I added DAP and EC 1118 yeast. Fermentation was vigorous for a couple days then it suddenly stopped at specific gravity of 1.040

Seeing that not all sugars in molasses are fermentable, what specific gravity is likely to to indicate end of fermentation?
