New to the game, How do you run your universe?

I've been playing WWE 2k for a long time now, have rosters, calendars, events, etc. It's pretty much fine tuned.
I love the idea of Fire Pro Wrestling, love the gameplay, and the level of customization.
However, I'm overwhelmed not sure how to determine champions, how to determine rosters, and get a routine going.
How did all of you start?
I want ideas so I can transfer fully over to Fire Pro, but with over 100 people on my roster that I want to use, I'm lost.
