Any working debloat and launch managers?

I know it’s been a cat and mouse race between amazon and sideloaders. I got an 3rd gen firetv cube (latest one) to test vs shield and it is actually noticeable faster.

As a general rule android usually gives the possibility to control the software and I would like to get rid of all commercial and streaming services that came with the box (sooo many) and run my own clean launcher like projectivity.

It seems to me the easy path versions of the non root scripts and apk is not working anymore, so I would like to ask

Can the box be set in recovery mode to load older firmware?
Is it any list over what to block of services, dns and firewall to limit all non essential requests
Is it any methods at all to debloat and run alternative launchers as of today on latest version?
